Well hello there! Long time no see! Do you remember who I am? Do you remember who Green Eyed Country Girl is? Do you remember I like to try to bring you delicious recipes? And sometimes a little personal life to mix things up? Or sometimes I tell you how to parent. (Not really, I just show you what worked for us!)
You might have read about me expecting a new bundle of squishy love and read that I have been having blood pressure issues. Well thankfully the blood pressure and the anxiety is under control and other than being so HOT and TIRED ALL. THE. TIME. I am doing great! The bouncing baby boy will be here in 3 short months(!!!!).
One of the marvelous things about working from home is that I can be flexible and take some time off when needed. Like when my kids are on summer break and I like sleeping more than working.
Anyway, I am ready to get back into the swing of things so today I’m bringing you this Easy Delicious Skillet Apple Crisp. My husband doesn’t even like apple desserts very much and he ate almost ALL of this and talked about how good it was for days.
Let’s just look at how delicious this looks for a minute mmkay?
Doesn’t that look divine!?
Of course it does. Here is how you make it.
First, preheat your oven to 350. Then you need 5 granny smith apples.
Peel them and slice them.
Next, melt 4 tablespoons of butter in your lovely Pioneer Woman cast iron skillet. Or whatever cast iron skillet you have. Mine is a 12″ by the way.
Now, throw in 1/2 cup brown sugar.
1 tsp of cinnamon.
And mix it all around.
Toss in the peeled and sliced apples.
Cook until slightly tender. Then turn the skillet off and leave it there or set aside.
For the topping you need 1 1/2 cups oats, 2 tbsp of flour (I used bread flour), 6 tbsp cold butter sliced into pieces, 1/2 cup brown sugar, and 1 tsp cinnamon. Toss everything into a bowl and use a pastry cutter to mix it all together until it’s crumbly.
Spread the topping over the apples in the skillet.
Slide the skillet into the oven set at 350 for about 35 minutes.
Serve with vanilla ice cream or just eat the crisp by itself, it’s amazing either way!
