Cinnamon Sugar Mini Muffins

Ingredients
Baking spray
preferably with flour

bread flour
1 1/2
cups
sugar
1
tsp
baking soda
1
tsp
ground cinnamon
1/2
tsp
allspice
1/4
tsp
ground nutmeg
1
egg
slightly beaten
1 1/4
cups
milk
2
tbsp
salted butter
melted
2
tsp
vanilla extract
Topping:
1/2
cup
sugar
1
tbsp
ground cinnamon
1/2
stick melted butter
Instructions
Preheat oven to 350, spray mini muffins pans well.
In a large bowl, sift together the flour, sugar, baking soda, cinnamon, allspice, and nutmeg.
Add the egg, milk, melted, butter, and vanilla.
Stir until just moistened. DON'T over mix, this will make the muffins tough.
Spoon batter into muffin pan, filling to 3/4 full.
Bake for 15 minutes, or until a toothpick comes out clean.
Allow to cool for 5 minutes.
For topping, dip the muffins in the melted butter and then in the cinnamon sugar mixture.
Serve and enjoy!
