I love the flavor that roasting gives vegetables. This roasted peppers alfredo penne is no exception. The roasted peppers are combined with creamy alfredo sauce and penne pasta. A perfect meal to prep to take for lunches as this recipe reheats well.

box penne pasta
or your favorite pasta shell

Alfredo sauce

red bell pepper
1
green bell pepper
1
yellow bell pepper
1
orange bell pepper

onion
salt & pepper, to taste

olive oil
Instructions
Slice the peppers and the onions, spread out evenly on a baking sheet, drizzle generously with olive oil & sprinkle with salt & pepper.
Roast at 400 for about 15-20 minutes.
While the peppers and onions are roasting, cook the penne according to package directions.
Drain penne and set aside.
After the vegetables have roasted, mix together penne, vegetables, & alfredo sauce.
Serve & enjoy!
