These pork baby back ribs take a total of 4 hours to cook, but believe me, they are so full of smoky BBQ flavor with a hint of spice, they are well worth the long cook time!
Just in time for grilling season these pork baby back ribs are perfect for a cookout, party, or simply for family dinner! This recipe does take a little more time, but it is still simple and easy! Most of the time is the cooking time. Low and slow makes these baby back ribs juicy and tender!

This baby back ribs recipe is made with an unusual ingredient. At least in my opinion. But my husband is AMAZING at grilling. I’m not sure he’s ever made anything on the grill that hasn’t been absolutely delicious! Hopefully this summer I can get some more of his grilling recipes up on the blog.

How to make the best baby back ribs:
First get your grill going. We used a smaller charcoal grill. We want the temp to be at or really really close to 200º.
Next, rinse the rack of ribs and pat dry, then lay on a foil-lined baking sheet. My husband likes to try to remove the strip of fat on the back of the ribs, you can use your hands to tear it off or if that doesn’t work use a knife to cut it off. Salt liberally on both sides after removing the extra fat. Drizzle with dijon mustard, be generous. Use a basting brush to cover the entire rack of ribs in the mustard. Sprinkle brown sugar bourbon seasoning (find it here), coat both sides of the rack of ribs.
Now you want to put the rack of ribs on the grill, you don’t want it to be directly over the flames, move to the side. Smoke for 2 hours watching the temp to make sure it stays at 200º.
After 2 hours, bring the ribs back inside and finish them in the oven. Preheat your oven to 200º about 15-20 minutes before the ribs are finished smoking.
While the oven is preheating, coat the ribs in BBQ sauce.
Finish cooking the ribs in the oven for an additional 2 hours.
Remove from oven, separate, and serve while they are hot!

The Best BBQ Pork Ribs
Ingredients
- 1 rack baby back pork ribs
- 1/3 cup dijon mustard
- 3-5 tbsp bourbon brown sugar seasoning
- 2 tbsp mesquite seasoning
- 3 tbsp bbq seasoning
- 2 tsp salt
- 1 tsp ground black pepper
- 1/4 cup bbq sauce
Instructions
- Preheat grill. You want it to be at 200º.
- Rinse and pat dry the rack of ribs. Remove the extra fat from the back.
- Salt and pepper the ribs, then drizzle with mustard liberally, use a basting brush to coat the entire rack of ribs in mustard.
- Coat in the remaining seasonings.
- Smoke on your grill for about 2 hours. We use a small round charcoal grill. Don't place the ribs right over the flames & heat, leave them a little to the side so they smoke. (See pictures above)
- After 2 hours, bring the ribs inside and coat them in the BBQ sauce.
- Next finish cooking the ribs in the oven at 200º for 2 more hours.
- Remove from oven, using an internal thermometer to make sure the ribs are finished cooking.
- Separate and serve while hot! Enjoy!
