White Chicken Chili

My husband and daughter love classic Beef & Bean Chili and while I do as well, I also like to change it up a bit and make this White Chicken Chili.

This recipe is easily made on the stove or the slow cooker, whichever way you prefer. I like the slow cooker because I can throw everything in in the mornings and know that no matter what time we eat dinner it will be ready to go!

My son is “not a soup kinda guy” and even he liked this when I made it.

How to make White Chicken Chili

  • 2 chicken breasts
  • 4 cans white beans
  • 1 medium onion, diced finely
  • 1 tbsp minced garlic
  • 2 tsp cumin
  • 2 tsp chili powder
  • 1 tsp garlic salt
  • 1/2 tsp black pepper
  • 6-8 cups chicken broth

For a slow cooker, add everything to the slow cooker and cook on high for 5 hours or low for 7 hours. Once you are ready to eat, shred the chicken with forks and serve! Top with shredded cheese, sour cream, or even guacamole!

Ingredients
  

  • 2 chicken breasts trimmed
  • 4 cans white beans
  • 1 medium onion diced finely
  • 1 tbsp minced garlic
  • 2 tsp cumin
  • 2 tsp chili powder
  • 1 tsp garlic salt
  • 1/2 tsp black pepper
  • 6 cups chicken broth

Toppings

  • shredded cheddar cheese
  • salsa
  • sour cream

Instructions
 

  • Place chicken breasts in bottom of your slow cooker.
  • Add drained & rinsed white beans.
  • Add onions and garlic.
  • Add chicken broth.
  • Add all spices, stirring into the broth.
  • Cook on high for 5 hours or low for 7. The soup is done when the chicken is cooked through and shreds easily with a fork.
  • Serve with shredded cheese, salsa, &/or sour cream.
