White Chicken Chili
My husband and daughter love classic Beef & Bean Chili and while I do as well, I also like to change it up a bit and make this White Chicken Chili.
This recipe is easily made on the stove or the slow cooker, whichever way you prefer. I like the slow cooker because I can throw everything in in the mornings and know that no matter what time we eat dinner it will be ready to go!
My son is “not a soup kinda guy” and even he liked this when I made it.

How to make White Chicken Chili
- 2 chicken breasts
- 4 cans white beans
- 1 medium onion, diced finely
- 1 tbsp minced garlic
- 2 tsp cumin
- 2 tsp chili powder
- 1 tsp garlic salt
- 1/2 tsp black pepper
- 6-8 cups chicken broth
For a slow cooker, add everything to the slow cooker and cook on high for 5 hours or low for 7 hours. Once you are ready to eat, shred the chicken with forks and serve! Top with shredded cheese, sour cream, or even guacamole!

White Chicken Chili
Ingredients
- 2 chicken breasts trimmed
- 4 cans white beans
- 1 medium onion diced finely
- 1 tbsp minced garlic
- 2 tsp cumin
- 2 tsp chili powder
- 1 tsp garlic salt
- 1/2 tsp black pepper
- 6 cups chicken broth
Toppings
- shredded cheddar cheese
- salsa
- sour cream
Instructions
- Place chicken breasts in bottom of your slow cooker.
- Add drained & rinsed white beans.
- Add onions and garlic.
- Add chicken broth.
- Add all spices, stirring into the broth.
- Cook on high for 5 hours or low for 7. The soup is done when the chicken is cooked through and shreds easily with a fork.
- Serve with shredded cheese, salsa, &/or sour cream.
