Peach Mango Muffins make a perfect make-ahead breakfast!
It is BACK TO SCHOOL time for so many of us! With back to school that also means back to crazy schedules so I whipped up these Peach & Mango Muffins for your busy mornings. They’re great for an after school snack as well!
If you are like my family, summer means a much more relaxed schedule, less routine and more fly by the seat of our pants. I used to try to schedule fun stuff for the summer but now we know that we prefer to be spontaneous and much more relaxed during the summer.
During the school year, however, it is a completely different story. We NEED routines and schedules during the school year to keep it all straight. Especially because we travel some, even during the school year, to visit family.
One of the BEST things I can do to ensure that our day starts smoothly is by making breakfasts that we can grab & go. It is SO EASY to make something that I can easily hand out as everyone walks out the door. That’s where these Peach & Mango Muffins come in!
These Peach & Mango Muffins are dairy-free! So if you or someone in your family has a dairy allergy or sensitivity they can still enjoy these delicious muffins. I’ve also been looking for ways to substitute not so healthy ingredients with healthy options. These muffins are sweetened with yogurt and honey. I headed out to my local Walmart to pick up some Silk® Peach & Mango Dairy-Free Yogurt Alternative, it was located in the dairy section of my local store.

Peach & Mango Muffins Recipe

Ingredients:
- 1 3/4 cup flour (I used gluten-free flour)
- 1/4 tsp baking soda
- 1/4 tsp salt
- 1/4 cup cooking oil
- 1 tbsp almond milk
- 1 egg
- 1 tsp vanilla
- 1/2 cup honey
- 1 cup Silk® Peach & Mango Dairy-Free Yogurt Alternative
- 1 cup diced peaches (I recommend using frozen)
Instructions:
Preheat your oven to 400°. Mix together flour, baking soda, salt, oil, almond milk, and egg.
Add in Silk® Peach & Mango Dairy-Free Yogurt Alternative, mix well, then add the vanilla.
Next, add the honey, mix well. Then add the diced fruit, mix well.
Line a muffin pan with 12 liners. Alternatively, you could use cooking spray.
Bake the muffins at 400° for 15-18 minutes. They are done when a toothpick inserted in the middle comes out clean.

- Next, add the honey, mix well. Then add the diced fruit, mix well.
