Hamburger Soup (also known as Poor Boy Soup) is loaded full of veggies and delicious, savory flavor.
Hamburger Soup
The other day I decided to make hamburger soup. We had a bunch of frozen hamburger patties that we had purchased for a cookout and then ended up not cooking all of. For some reason, they didn’t grill well so I decided to break the patties up and make hamburger soup.
I’ve made hamburger soup in the past and it hasn’t been very flavorful so I knew I wanted to find a recipe that was going to have lots of flavors. The Pioneer Woman is ALWAYS the very first place I turn to when I am looking for a new recipe to make. I have yet to make something of hers that wasn’t absolutely delicious.

What’s so great about Hamburger Soup is you can make it to use up leftover veggies from the rest of the week’s meals or if you have veggies that are less than fresh and need to be used up.
I prefer my hamburger soup with lots of salty ground beef chunks and potatoes. But really, any of your favorite veggies will do!
My family highly recommends this recipe. You can find it at The Pioneer Woman’s site.
